Less is best. Time is everything. Every loaf is handcrafted in-house by the bakery team with traditional methods, quality ingredients and no preservatives.
The dough ferments for 18 hours—not two hours like many commercial bakeries.
The breads use a short list of quality ingredients: fresh yeast, superfine salt, Mauri unbleached and stoneground flours, freshly milled locally grown whole wheat, neutral oil and water.
Every loaf is baked on a stone hearth and contains no preservatives. Some sourdoughs ferment for 20–24 hours, including one made from the bakery’s own natural yeast source and a 20-year starter.
Products are seasonal and may not be available at all times. Call ahead if you are visiting for a particular loaf.
